Protein Pancakes:

Ingredients:

• 1 ripe banana

• 2 eggs

• 1 scoop of vanilla protein powder

• 1/2 cup of oats

• 1/2 tsp of baking powder

• Cooking spray or coconut oil for greasing

Instructions:

1. In a blender, combine banana, eggs, protein powder, oats, and baking powder.

2. Blend until the mixture becomes smooth.

3. Heat a non-stick pan over medium heat and coat with cooking spray or coconut oil.

4. Pour 1/4 cup of the batter onto the pan and cook until bubbles form on the surface, then flip and cook for another minute.

5. Repeat with the remaining batter.

Ingredients:

• 1 pound of boneless, skinless chicken breasts, cut into chunks

2. In a large bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper to make the marinade.

3. Add chicken, bell pepper, red onion, and zucchini into the bowl and toss until well-coated with the marinade.

4. Thread the chicken and veggies onto the soaked skewers, alternating between chicken and veggies.

5. Preheat a grill or stove top grill pan over medium-high heat.

6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the veggies are tender.

7. Remove from the grill and let rest for a few minutes before serving.


Greek Yogurt and Berry Parfait:

Ingredients:

• 1 cup of Greek yogurt

• 1 cup of mixed berries (such as strawberries, blueberries, and raspberries)

• 1/4 cup of chopped nuts (such as almonds or walnuts)

• 1 tbsp of honey

Instructions:

1. In a serving glass or bowl, layer Greek yogurt, mixed berries, and chopped nuts.

2. Drizzle honey on top for sweetness.

3. Repeat the layers until all the ingredients are used.

4. Serve and enjoy as a high-protein, nutrient-rich dessert or breakfast option.
